I promise you that this will produce a "bootable" kernel for you assuming all other things are in order. As for Grub...just follow the handbook to the letter and you will be fine. Do bear in mind that when you specify the kernel in Grub you need to be specific:
kernel /kernel-2.6.3-gentoo-r1
Grub needs more than just the 2.6.3...it needs all of it.
Don't get frustrated with Gentoo. It is the greatest Operating System on the face of the Earth. Be patient, learn it and make it work for you. Many times this week I threatened to re-install redhat but I hung in there and the result was well worth the effort.
