About empathy, jabber and voice/video call

First, I'm using gnome (light) 3.4. I would like to make a video call using empathy and a jabber account, is it possible? What I have to install? Can I have a call also with contacts using gmail? At the moment I can just chat.

Why if I go in on-line accounts in system settings I can only add Windows live (!?), Facebook (!?) and Google? Where's jabber/xmpp?
