is it possible to chroot into my gentoo machine from my ubuntu and if so.. how ?
Cause when i emerge kde it'll take a long time (meta packages) so that way i can do other things ;)

Yes, you should be able to ssh into your gentoo box from another linux after you do the initial install, emerge and start openssh, and create a user belonging to the portage and wheel groups.
Time is what keeps everything from happening all at once.

Same as a normal install. Instead you don't need to boot the cd, but use your existing ubuntu installation. And if you intent to keep ubuntu you won't have to install a boatloader either, but simply add an entry for Gentoo to your existing boot config file.
If you already have a partition available, you just create a filesystem on it and mount it somewhere. Easiest is to just mkdir /mnt/gentoo and then mount the partition on /mnt/gentoo. That way you can just follow the instructions in the installation handbook without having to "translate" certain commands to your situation.

Then nixnut is correct and that is my favorite way to install Gentoo. You could also use another distros livecd to install.
Time is what keeps everything from happening all at once.
