I emerged oo.o 2.0.0_rc2 last night, and everything went fine on the first try... With one small problem.
Some crucial keys aren't recognized within OO Writer. Backspace, delete, and the arrow keys to name a few. They work fine in OO Calc. I've tried removing my .ooo-2.0 dir, no luck.
Just in case someone else encounters this problem.
First of all, when you have an NFS-imported homedir, it seems your NFS must support file-locking. I was tunneling nfs over ssh, but not statd and lockd, thus not having the locking-stuff work decently. Regular nfs seems to work however. This problem is indicated by a welcome screen that returns every time, "general errors" when saving a document or quitting OO, ...
Second, the problem with the keys that do not work (arrows, backspace, delete, ...) was solved here when I removed my new AND old openoffice profile (.ooo-2.0 and .openoffice1.4 directory), and restarted openoffice. Maybe something goes wrong importing old settings, I don't know...
I just had the same problem -- it seems that whenever you switch locales (this is a fresh Gentoo install so I had just changed LANG to something more unicode-friendly) you have to adjust something inside OpenOffice, or rm -rf ~/.ooo*
