Homeworld was great, too few tracks though. So I'd go with Legend of Zelda: Ocarina of Time or Legend of Zelda: Majoras Mask. The orchestrad versions are amazing just like the ones in the game. Occasionally I do hum the WC:2 soundtrack though.

I really like all the orchestrated Final Fantasy soundtracks and the Final Fantasy vocal collections. Anything by Yasunori Mitsuda (Chrono Trigger, Chrono Cross, Xenogears, Xenosaga) is great too.
IMHO console RPG soundtracks are the best (Nobuo Uematsu,Yasunori Mitsuda, Motoi Sakuraba ...), but there are also a few occidental game OSTs that I like, especially the work of Jeremy Soule (Total Annihilation, Morrowind, Dungeon Siege, Icewind Dale....).
It's funny to note that Soule seems to be a fan of japanese composers too. In addition his first work in game music industry was with Squaresoft.
