Catalyst and Gentoo LiveCD

Hello,

Just wanting to make sure I'm reading what I've read about Catalyst correctly. I want to be able to build a custom bootable LiveCD that runs X with Fluxbox, Firefox, and a few other applications. This would be to use with machines here at the office, as we're doing a thin-client based setup here, but we're not content with it.

Just wanted to get some feedback on this to make sure I read right. If what I'm trying to do isn't feasible, is there other alternatives? Knoppix is great, but it gives the users too much to play with, especially since most of them know nothing about Linux.
