Don't ask how but with the last updates in the unstable branch (kde-frameworks 5.41 and kde-apps 17.12.0) is now possible to get back this feature that in kde4 was provided by the package mplayerthumbs.

To enable it obviously you need to enable ffmpegthumbs in dolphin configuration and edit ~/.config/kdeglobals as follows:

hmm maybe is it a detail that was fixed? at least I always had video thumbs, configurably via the regular dolphin settings.
