Got gnome 3.10 and some of the windows have the new title bar and some don't. Anybody know how to get all the windows to have the new style title bar?

Sorry, this is unfortunately an ongoing conversion, and I don't think there's anything you can do. Hopefully in 3.12 most everything that matters has converted over.
