I'm coming across this bug in VirtualBox which prevents Gentoo guests from booting if they have a 3.10 or later kernel: https://www.virtualbox.org/ticket/12469

Is there any installation media available for x86 which uses an older kernel (apparently 3.8 works), and as part of the install can I specify that the final system has a pre-3.10 kernel? Only 3.10.x seems to be marked as stable for gentoo-sources.

Checking znurt.org there are several kernels earlier than 3.10 still in portage;
you just need to unmask them. You can build Gentoo using any bootable
Linux iso image - I think I built my last Virtualbox image from Ubuntu.

Alternatively, install a Gentoo image in Virtualbox without booting it, and
then chroot into it from a working (Ubuntu?) iso image and just emerge
the kernel you want.

Is there any documentation for that? All the handbook instructions assume you're using the environment from the minimal ISO.

Once you are inside the chroot the external (Linux) doesn't really matter; the instructions should be identical.
The tedious part is messing around with Virtualbox to mount the right filesystems in the right places.

There is one extra step to install from a non Gentoo boot media.
Code:
mkdir /mnt/gentoo
This is not required if you use System Rescue CD as your boot media.
