In diesem Bug geht es um eine ähnliche Fehlermeldung (ebenfalls "undefined symbol"), ich bin vor einiger Zeit selbst mal über solche Fehler gestolpert. Bei mir hat der Tipp aus obigen Bug, nämlich

export VMWARE_USE_SHIPPED_GTK=yes

(eingefügt als erste Zeile in /opt/vmware/player/bin/vmplayer, bei Dir dann evtl. analog /opt/vmware/workstation/bin/vmplayer), geholfen.
