Is there a prefab way to change the default selection in GRUB or some other mechanism to reboot from a specific grub.conf entry? I could try making something myself but if something already exists that easily integrates with Gnome, I'd like that better...

You can set a default=n (starting from 0) in your grub.conf to change which selection is the default. I am not aware of any pretty GUI frontends.
