Not that sissy stuff, either. We're talking about anything habenero based and up.

Scoville Scale

The hottest I've turned into a sauce are caribbean reds. They rank somewhere between Habenero's and Red Savina's. Delicious stuff, that.

hot sauce is lovely, too much of anything hot ruins it though so you have to know your limits

lol I remeber all the hassle I had just to get the 1million scoville, I had to sort out this disclaimer as well
it was like 3 back & forth emails to confirm and have a copy both ways that I had confirmed that I waiver the right to sue for injury

I voted yes because I love hot sauce. However I don't mess around with the ruthless stuff anymore (habanero and up). I had my times when i was younger and was trying to prove my manhood or whatever. Now I like something with a little bit of kick and really nice flavor. A cheap-ass Jalapeno sauce I get at Aldi has just the right amount of kick (way more than Tabasco, not nearly as much as Habanero) and delicious flavor. I love Aldi!

I like hot sauce, but I can't stand the stuff that is basically capsacin and vinegar. The hotter it gets, the more it tastes like vinegar. I prefer things with a lot of flavor to them. This, for instance, tastes great. Not very hot, though. Come to think of it, I get all my hot sauce from Peppers.

Good flavor is mandatory. Heat for the sake of "mine's bigger than yours" is an apt goal.

As soone as I finish my degree (2 months!), and start a real job, one of those will be sitting on my shelf.

Note, that these are not hot sauces, but rather pure capsaicin crystal. Capasicin is the chemical that makes hot sauces hot, and 16million is as high as it can go. Each of the $300 bottles only has 1ml of capasicin though. It is meant to be a collectors item, and never eaten, although this guy opened his and put a single crystal into a pot of tomato soup. He ended up throwing it out as it was too hot.

The hottest hot sauce I have in my collection is 1,000,000 scoville units (CaJohn's Magma), but that isn't technically a sauce, rather it is an extract (oleoresin of capsaicin or somesuch). I've never eaten any of my extract sauces, but I have eaten whole Red Savina habaneros before (I grow them), and they top out at around 500,000+ (although mine are probably in the 300k - 400k range)

There is a guy (http://www.chilisfirepit.com/) that lives about 30 minutes away from me that makes some great sauces that are packed with flavor, but aren't too hot. They are hands down my favorite sauces, especially "Limelight" (serranos and lime) and "Dark Vader" (chocolate habaneros - named for chocolate color, not flavor).
