Anyone know what I need to install (emerge) to get xxd on my system? I tried a) searching the forums and b) using emerge -s

Assuming I can get it, what is the best way to find info like this in the future? i.e. where software can be found if you're not quite sure what package it might be in?

Assuming you're talking about the hex dumper it's part of vim-core. You can usually find out what package a program is part of by searching google.
