Has anyone here set up chroot'd apache on gentoo? Or other server software? I'd apreciate any tips and tricks, or better yet, a little how-to :)

With google's help I've found several sites covering chroot.
http://penguin.epfl.ch/chroot.html describes how to 'chroot' an Apache tree with Linux and Solaris. That might be what you are looking for.

Often bind gets to jail. http://www.linuxsecurity.com/docs/LDP/Chroot-BIND-HOWTO.html

openssh can easily be chrooted. See the option UsePrivilegeSeparation in your /etc/ssh/sshd_config.
