I am wondering at the time I installed this Gentoo it was 2.6.7-gentoo-r5 but now I see r11 is out. I did emerge -uD world but how can I make sure that I am not still using 2.6.7-gentoo-r5 and
using 2.6.7-gentoo-r11?

When you emerge a new kernel, it is not automatically installed. You have to build it yourself.
You can check what kernel you're currently using whith the following command :

uname -r
