Hi! I have my first gentoo installation running and I am in the process of installing applications. It appears as if a lot of these apps need to know what hardware I am using. Is there an application out there that does hardware detection and will dump a hardware profile of your machine?

Well, if you emerge pciutils, then 'lspci' will tell you what PCI devices you have installed. Also take a look at /proc/bus/usb/devices for your USB setup. If you want something more thorough, there's HAL device manager, but that's fairly experimental at the moment.
