Alright, I am wondering what things I absolutly need to be selected, and what things I really don't need. If anyone can point me to a guide, it would be great. I googled around, but I couldn't find all that much of information on the subject. I'd just like this kernel to be as optimized as possible.

First question: Have you ever configured the kernel with menuconfig before?
The very first step is to look at the gentoo installation guide, there you can learn the "basics".
And use the help inside menuconfig to get more information about the entry.

Yeah, I've done it a few times. I was just wondering if there are some things I should leave out, but I got it covered now.

Okay, take a look at the gentoo installation guide, there you can find a chapter about manual kernel configuration, use the desktop configuration guide for usb mouse support information,
Or you can get my kernel .config file if you want so.

Your best bet is to simply look through all of the options in menuconfig. If you don't know what something is, select "help," which usually gives a useful explanation. If you don't need something, unselect it. For example, I never use my parallel of serial ports, so I disabled support for them.
