Hello roashru!

That's an interesting request, however adding a new downloadable image would require some extra work from some volunteers, so we really need answers to those 2 questions:

Why do you need an intel i DVD when amd64 one already gets the job done? Like in: how is it going to benefit you and the community?
What would you like to have changed in an intel i version?

roashru,

Gentoo does not have to be generic but it can be.

Making a boot dvd desktop, with the desktop(s) of your choice can be accomplished with the catalyst tool
Its been discussed Making a custom gentoo livecd

As you want to learn, the first step is
Code:
emerge catalyst

Catalyst can build anything into a bootable image, built your way.

That's how the existing LiveDVD and all the other Gentoo live media are created.

roashru,

In theory, you can make a liveCD on one system for any other system. Even completely different architectures.
That's a process called cross compiling.
It adds another layer of complexity that some build systems do not handle well.

There in a half way house for intel/amd and other similar but different architectures. The key thing is that you can build what you want and install what you want, with any CFLAGS you want, as long as you don't need to execute it.
So building LibraOffice on AMD but targeted for Intel is OK as long as you don't actually run it on AMD.
Doing the same thing for gcc and friends is difficult, as you need to execute thew on the build host.
