ZFS is built in the kernel and I don't want native zfs encryption, but luks. I have crypt_root and real_root set in cmdline, but if I exclude initramfs I get kernel panic, saying it couldn't find rootfs. I guess, it's because the kernel doesn't know about the LUKS partition, so is there any way to build LUKS into the kernel?

You can build the initrd into the kernel but as LUKS is a userspace tool, the real answer is no.
