I did an install and mistakenly set fstab to use /dev/sda2-4 as per the standard example, even though my actual drive is /dev/sdd. Why does it still boot correctly? When I changed it to use /dev/sdd, it continued to boot correctly. It's like fstab doesn't matter any more.

The root partition is already set in the bootloader, so it doesn't care about that. If the others don't mount it'll just put all files in there instead and carry on like nothing happened (until next reboot you find out the wrong kernel's running, or whatever).

Do you speak about the /boot entry ?

Note that it is sometimes possible to go without fstab, using systemd and a GPT partitioned disk with carefully chosen partition types. See here.
