If you have a spare disk plz move your install to new disk then create full disk encryption and move your install back to encrypted disk.
Plz use rsync to move your system around.

Modern kernels support also filesystem level encryption, this is an option to encrypt your sensitive data without moving the whole install.

Enabling full disk encryption would require rewriting all the unencrypted sectors with corresponding encrypted ones. Doing so in-place is technically possible, but generally discouraged, because even when it works, it has the caveat that interrupting it is likely to leave the partition in an inconsistent and unrecoverable state. If you have the storage to protect against that by making a backup, then you also have the space to do it the simple and safe way described above.
