On what system?
SD/MMC cards are slow, often don't do wear levelling very well and should be avoided for swap space and portages build space.
If you really must install Gentoo onto a SD/MMC card, go ahead and follow the handbook.
All that you need to change is the hard drive device and partition names.
Your device needs to support booting from SD/MMC too.
