I'm looking for a quick way to capture video from my desktop. I have a few tutorials for LibreOffice I need to do and while I know I can emerge a bunch of complex apps, I was thinking I could probably pipe the video out to a compressor and/or file on the disk with shell commands. Is there a way to do this or do I need to emerge one of those desktop capture apps?

Indeed there are quite a few ways of going about this one.

I made a Bash script with some “fancy” additions using 'media-video/ffmpeg' as well, but nowadays there is also 'media-video/obs-studio'. This one is more or less only for ones that already have Qt5 around though, as it would be quite a bit of dependencies for just that purpose (well, not if used a lot, I maybe guess). :]
