The fonts which are used to display menus and toolbars in Mozilla are terrible - a default courier-type font is used. Where can I change them to some nice aa fonts?

Mozilla builds its own menus and toolbars without using Qt or gtk. (I believe) Currently the font used is the same as the one set as the default proportional font under Edit -> Preference -> Appearance -> Fonts. If you have it set to "Serif" then the default serif font will be used, and the same for "Sans Serif".

Hopefully soon Mozilla will inherit toolbar font preferences from gtk or Qt. There are several bugs reported to Mozilla on this issue.

At least in phoenix (and probably in mozilla) there is a file userChrome.css in the chrome dir under your profile dir. There is an example file there too which will show you how to define font preferences for the interface.

I was able to set the font and size in the toolbars and the menus, but for example the fonts used to display dialog boxes and the "preferences" page are still unaffected by my choices. I can't send you any screenshots because my gentoo machine is not connected to the network, I'm at work and connecting home machines is a big no-no :-)
In userChrome.css i've set font-family and font-size for the following items:

window, urlbar, menu, menulist, menubutton, menubar, menuitem

I've set them all like this: (example)

window {
font-size:10pt !important;
font-family: helvetica !important;
}
