1/ when mentioning jack, do you mean the jack audio connection kit ?
2/ If yes to 1/ then please do consider that jack is no more no less than : What is is !
That is to say : A sound server ! A sound server period, I mean.
=> while it can happily deal with that sort of things, it has absolutely *nothing* to do with an equalizer, mixer, amplifier, resampler or whatever sound transformation stuff.
The *only* pupose of Jack is to push as an input to something else (than jack) nothing but exactly and precisely the data it received from another something else.
=> Do not look for level adjustments knobs on jack !
=> Adjust the levels either from the application you connected as an input to jack or adjust the levels on the mixer you connected as an ouput to jack.
(this provided you made sure the connections are actually made) _________________

I am afraid there's quite a lot of things I do not understand.
1/ What do you want to achieve there ?
- Use the Jack audio connection kit ?
- Playback what you are recording irrespective of the tools ?
- Playback what you are recording thanks to jack ?
- What do you use pulseaudio for ? Is there some sense somewhere for you in getting pulse & jack on the same system ?

What do you mean ?
- Noise and only noise ?
- Your voice + noise ?
- Your voice somehow distorted + clicks, clangs, clongs, blips ?
3/ In the case you want to use jack, did you install qjackctl ?
4/ Do you get a $HOME/.asoundrc or a /etc/asound.conf ? If yes list them !
5/ What happens when you aplay whatever sound file ? When you arecord... Is your alsamixer working fine in these cases ?
6/ Are you working under console or under whatever DE ?
Well... come on ! Help us helping you ! _________________
