Is it possible to run (for example) Gnome with user X, XFCE for user Y and LXDE for user Z?

How can I do that?

definitely.

IIRC most DM store the last session (DE/WM) a user used, and reuse that on the next login.
I think, it does not matter what DM is used, as long as it allows choosing the session (e.g XDM is too simple).
