I'm upgrading my celeron-433 box to dual 1.1 Ghz pentium threes this weekend. I'm getting a gigabyte 6vxtd motherboard with a via chipset and i was wondering what were some of the different options i have to set in make.conf, make.globals and make.profile.

In /etc/make.globals there is an field called MAKEOPTS="-jxx". X being the number of processors you want spawned when compiling. Some people say a value the sum of processors plus one is good. I use -j4, gives me a slight boost compared to -j2-3. Some people like to put a high value like -j8-10, which I've found did nothing but increase memory use.
