I'm just wondering if anyone out there has gentoo running on a tablet or mobile phone. I for one would love to have gentoo on my phone and would love to hear if anyone has done such a thing.

Gentoo runs on a lot of embedded hardware, and tablets/phones are no exception. http://dev.gentoo.org/~armin76/arm/armhw.xml However don't expect a polished experience.
