tl;dr: what are the new software and setups that I don't know about since I've been out of the gentoo game for a few years?

I switched from linux to mac in '04 because I need MS Office, and OO.o and wine are just not satisfactory for the professional world. I have an '08 Mac Pro that's my home theater computer. I have a mac laptop so I have a "normal" platform and can deal with outages on the desktop. The new osx doesn't support my remote wonders, but linux does. Basically, I'm asking what software and setups y'all would put on a home theater box that's also used for basic editing of MS Office files. Also, I prefer mail programs to webmail. (I used sylpheed-claws and then Mail.app).

Libreoffice is the best linux program for editing office on Linux. But still, it really is bad.

I actually believe your best options for many services such as mail, file storage, and doc editing are nowadays cloud services, which are hard to beat for reliability. Gmail, wuala, and MSFT online doc editing for instance.

Well, one thing to consider is a prefix install of gentoo. It runs in your mac user's user space, using the mac's unix kernel. It won't be able to install everything available to gentoo, but the number of packages is growing.

Also you'll find portage has grown a bunch in the years you've been away. Many things are now automatic that used to be a pita.
