Hi,
If I emerge gentoo-sources how can I tell what version of the kernel I am going to compile?

by checking the /usr/src/linux symlink... you can change it by either unlinking it and relinking it, or using eselect.

# cp arch/i386/boot/bzImage /boot/kernel-genkernel-x86-2.6.24-gentoo-r3

genkernel also has an --install option, but i'm not sure if you need to mount /boot first or not... i would imagine it might also have an option for that too...
