ESRI has some of it's products available for Linux. There is an also an open source GIS application called GRASS. It appears to be very powerful but it is really complicated and, in my opinion, not very intuitive.
Mapserver is another open source GIS application. With this you can create web pages with maps in them (think MapQuest). I use Mapserver and it kicks ass. It's a great open source project.
