So if root is on partition 4 of something in grub.con and working, it needs to be on partition 4 here too.

Is your root /dev/sda3 or /dev/sda4 ?

There it goes. Fstab was pointing to the wrong partition. I feel like an idiot now because I understand how it worked, I just missed it completely....
