set font order in ~/.fonts.conf?

I used the various guides and postings here to setup simplified Chinese input on my KDE system, but I still have the problem that the fonts are not quite right. Especially for skim when I type pinyin any simplified character shows up as a "dot." Only the "simplified" characters that are unchanged from the original (ie - same as traditional) display correctly.

One of the postings says you should modify your font order in ~/.fonts.conf. Can someone tell me how to do this and what would be a good order to put down for simplified Chinese?
