I notice in the current mips handbook the following profile is mentioned:

On may machine, though, I just get

So how does one read more about these profiles, and which one is right for O2?

As far as I know, O2 is ip28 architecture and it only supports o32 userland. So, this limits your choise.
In my opinion, you can use whatever 2000.8 profile you prefer and then configure your /etc/make.conf appropriately. Some configuration in /etc/portage directory may be necassary, too.
Please, don't consider my reply authoritative since I have no experience with O2. My machine is Octane (ip30).
