when i use gcc-config I get:
..
[19] x86_64-pc-linux-gnu-3.4.6/amd64-hardened
[20] x86_64-pc-linux-gnu-3.4.6/amd64-hardenednopie
[21] x86_64-pc-linux-gnu-3.4.6/amd64-hardenednopiessp
[22] x86_64-pc-linux-gnu-3.4.6/amd64-hardenednossp
[23] x86_64-pc-linux-gnu-3.4.6/amd64-vanilla
...
I never use hardened/nopie/nopiessp/nossp, only vanilla.
Is there a way to remove those profiles / gcc-versions and even prevent them from being built automatically?

The gcc profiles are only presets for other system/configuration types...
They don't cause longer compile times nor do they cause any problems while they're not selected.
I'd say it's safest to keep the profiles as they are.
