I want to install Gaim 2.00beta 1, but when running portage it is not available

emerge --pretend gaim

the "[M]" means it is hardmasked (unstable)... look in "man portage" at "MASKED PACKAGES"

2.0 beta2 has been released now, it seems support audio and video now.
I emerged this from BMG, but didn't test the voice and video support now.

but how to unmask 2.0.0 beta2? i made "net-im/gaim" in /usr/portage/package.keywords
but didn't help

to get around a hard mask, you need to add an entry to package.unmask, not package.keywords

emerge -pv tells you about all possible USE flags for an ebuild. In this case, there is no offensive flag.
