So, i can use dmesg to get the bootup diagnostics information, but at a certain point, this switches to the colored information about different services starting up. What command can I use to view this information after I've already started using the system, and it's no longer on-screen?

That info (as verbatim) is gone. You can get a detail of what started up by looking at one of the following files, depending on which logger you installed:

metalog: /var/log/everything/current
syslog: /var/log/messages

For metalog, the output is buffered so you will need to send a USR1 signal to tell metalog to flush the file immediately. To do this, use "ps -ef" to find the metalog PID, then use kill -USR1 <PID>.

Wouldn't "killall -USR1 metalog" do the job just as nicely (and more conveniently at that)?

Yes, it would. However there are two metalog processes listed and I am not sure if both should receive the signal, i.e. one may abort. I could just try it though and if it worked, killall is much easier.
