If you emerge and install some applications, does it automatically show up on the KDE or Gnome or enlightenment start menu? If not, how can I add the apps such as Mozilla and other apps that I install??

I can help you with the KDE part of it...not sure about Gnome or Enlightenment. I dont use gnome much at all and i have not used the other for more than five minutes

For kde under the click on the "K" (i think they call that the kicker) then click system>kAppfinder. Then it will scan your system for new programs and add them to the menu. I suppose you can also do Run>KAppfinder.

I have manually added icons for mozilla using the menu editor in KDE. Not sure of all the steps and I am not at my gentoo workstation at the moment. Will try and repost tonight when I get home. :(

Some apps do, some apps don't.
In some cases you might have to restart your KDE/Gnome session for changes to take place -- I believe such is the case with KOffice.

You can always add shortcuts in case they're not created automatically though.
