After I emerge -e world will that update my system to the latest and greatest kde 3.0.3 and gentoo1.4 and gnome2?? What exactly does it update?

I'm not certain what that is supposed to be, but if it is 'emerge -e world' then you should be able to use the -p flag (pretend). 'emerge -ep world' Would show you what it would update.

emerge -e world will rebuild your entire system from scratch. If you just want to update packages, emerge -u world should be fine. Remember to use the -p option first to see what it will build.

However, be very careful upgrading world, because you might get a package that breaks your system. We won't call any names, but well...... GCC 3.2 springs immediately to mind. :)

I would emerge -pu world and emerge the packages by hand if I were you.
