Does courier-imap allow the use of submaildir's (a sorted maildir for mailing lists and so on)? If so do all imap mail clients support that or am I stuck using mutt? |

Yes, and certainly sylpheed-claws and Mozilla work fine (and I don't see why any other IMAP-capable MUA would have a problem).
As an aside, I'm puzzled that you asked this question - you could have emerged courier-imap and whichever MUA you want to use and tried it in less time that it has taken to get a response here.
