I just emerged k3b, the burning software, and went through the k3bsetup and let it do its thing. It created these fstab entries:

/dev/ide/host2/bus1/target0/lun0/cd     /mnt/dvd        auto    ro,noauto,user,exec     0 0
/dev/scsi/host0/bus0/target0/lun0/cd    /mnt/cdrom      auto    ro,noauto,user,exec     0 0

These appear to be correct. I commented out my previous entries so these would work, and discs mount properly when I do a 'mount /mnt/cdrom' or 'mount /mnt/dvd'.
It was supposed to take care of all the permissions, but when I start up k3b as my regular user, there are no devices listed in the configuration. However, if I run it as root, then they are there. I went through the permissions its supposed to change (cdrecord, mkisofs, etc) and they seem alright, and the 'cdrecording' group was created and my regular user was added.

Anyone had similar issues with setting this up?

Try this for command:

LOGNAME=root kdesu k3b

This will prompt the user for the correct root password and k3b should work.

I found another thread here that I missed before. Changing the group from 'cdrecording' to 'users' in k3bsetup seems to have fixed the problem.
