A lot. I think I have heard of people doing it with 2GB, but that might not have been a stage1 install. I would think that 3GB would work for most applications (mozilla and openoffice.org possible exceptions).
You will probably need to keep on top of the contents of /usr/portage/distfiles (where the downloaded tarballs are stored), though, and remove the tarballs as packages are installed.
