I'm trying to compile 2.6.5 for my Ultra 150. I'm going for the whole 64bit experience. Unfortunately I've messed around with the compilers in the wrong way, largely through inexperience. Could someone guide me through setting up everything to get 2.6.5 going in 64bit land.

Currently, you cannot compile 64 bit applications in Gentoo/SPARC. Depending on how you have adjusted things, you may want to emerge or re-emerge binutils, gcc, glibc and gcc-sparc64. gcc-sparc64 will give you a 64 bit compiler to make kernels, but it cannot built regular applications.

Is the gcc-sparc64 compiler used by default when you type make vmlinux or you have to configure it?

If you haven't done anything out of the ordinary with your environment setup, then yes, the kernel should automatically use gcc-sparc64.
